1 1/2 lbs. - Lean Ground Beef
2 cans - Minestrone Soup
2 cans - Tomatoes with Green Chiles
1 cup - Pinto Beans
2 cups - Frozen Mixed Vegetables
Salt and Pepper to taste
Garlic Powder to taste
Brown beef with salt, pepper and garlic. Drain on paper towel and add back to dutch oven. Add remaining ingredients and cook for 30 minutes.
Variation: Do not add ground beef - makes delicious veggie soup for 1 point per serving.
Also, black beans are a great substitute for the pintos.
