Nonstick cooking spray
3/4 pound - Ground Chicken
1/2 cup - Broccoli Slaw
2 - Garlic Cloves, minced
1/4 tsp. - Crushed Red Pepper
2 tbsp. - Diced Water Chestnuts
3 tbsp. - Light Sesame Ginger Dressing
20 medium - Boston Lettuce Leaves
Heat a nonstick skillet over medium-high heat. Coat pan with cooking spray. Add chicken, slaw and garlic; cook 6 minutes or until chicken is browned, stirring to crumble. Reduce heat to low and stir in red pepper, water chestnuts and dressing. Cook until thoroughly heated. Fill each lettuce leaf with 2 tablespoons chicken mixture. Serve immediately.
Serve wth an Asian dipping sauce or peanut sauce, if desired (be sure to add extra points).
