2 1/2 cups - White flour
1 1/4 cups - Sugar
3 3/4 tsp. - Baking Powder
3/4 tsp. - Salt
3/4 cup - Canola Oil
1 cup - Applesauce
1 tsp. - Lemon Extract
2 1/2 tsp. - Orange Juice concentrate
1 tbsp. - Orange Zest
9 - Egg Whites
3 1/3 tbsp. - Sugar
Preheat oven to 375 degrees. In a large bowl, sift together flour, first amount of sugar, baking powder and salt. Set aside. In a separate bowl, whisk together canola oil, applesauce, lemon extract, orange juice concentrate and orange zest. Set aside. In a small bowl, whip egg whites until foamy. Add in second amount of sugar and whip until stiff, not dry. Combine wet ingredients with dry and stir. Gently fold whites into batter until just incorporated. Pour batter into a Bundt pan sprayed with nonstick vegetable coating. Bake in preheated oven for 45 minutes to 1 hour, until cake is baked through. Remove from heat and let cool.
