3 boneless/skinless cooked chicken breasts, cubed
5 corn tortillas, cut into bite size pieces
1 can low-fat cream of chicken soup
1/2 cup low-fat grated cheese
1/2 can (small) diced green chilies
Combine ingredients and pour misture into pie plate. Sprinkle Mexican seasoning (like Taco seasoning mix) on top. Cover and bake at 350 degrees for 30 minutes.
Kelley's note: This is an easy-to-do recipe that turned out really well. You just can't beat a recipe that has only 5 ingredients (well, 6, including the Taco Seasoning sprinkled on top). It was a hit at my house and I will definitely make it again.
