Baked Hush Puppies

Serves: 8 (3 Hushpuppies each)
WW Points per Serving: 2

2/3 cup - Yellow Cornmeal
1/2 cup - Minched Onion
1/3 cup - All-Purpose Flour
1 tsp. - Baking Powder
1/2 tsp. - Salt
1/3 cup - Skim Milk
1/4 cup - Egg Substitute
1 tbsp. - Vegetable Oil
1/8 tsp. - Pepper
Cooking Spray

Preheat oven to 450 degrees. Combine first 5 ingredients in a medium bowl; make a well in center of mixture. Combine milk, egg substitute, oil and pepper; add to cornmeal mixture, stirring just until moist. Divide batter evenly among miniature (1 3/4 inch) mufin cups coated with cooking spray. Bake at 450 degrees for 12 minutes or until lightly browned. Remove hush puppies from pans immediately. Serve warm. Makes 2 dozen.
