½ cup fat-free mayonnaise
2 tbsp. mango chutney
1 tbsp. curry powder
2 ¼ pounds reserved cooked chicken from Roast Chicken with Lemon and Oregano.
2 celery stalks, diced
1 Granny Smith apple, diced
¼ cup golden raisins
2 tbsp. toasted pecans, chopped
2 scallions, thinly sliced
Mix mayonnaise, chutney, and curry powder in a large bowl. Remove chicken form the bones and chop. Add to the mayonnaise mixture with the celery, apple, raisins, pecans, and scallions; toss well to coat.
