2 pounds Sweet Potatoes, peeled and cut into chunks
1/2 cup cubed pineapple (fresh or canned in juice)
2 tbsp. honey
2 tsp. fresh lemon juice
1/4 tsp. cinnamon
1/4 tsp. salt
Freshly ground pepper, to taste
Bring the potatoes and enough water to barely cover to a boil in a large saucepan. Reduce the heat and simmer, covered, until the potatoes are tender, 12-15 minutes. Drain the potatoes, reserving 1/3 cup of the cooking liquid.
Return the potatoes to the same pan. Add the pineapple, honey, lemon juice, cinnamon, salt and pepper. Continue to cook over low heat until the potatoes are coated and glazed, about 3 minutes. If necessary, add a little of the reserved cooking liquid to prevent the potatoes from becoming too dry.
