Meatloaf

Serves: 8
WW Points per Serving: 3

1 1/2 pounds 95% lean ground beef
1 medium yellow onion, finely chopped
1/4 cup finely chopped green pepper
1 1/2 teaspoons crushed fresh garlic
2 tablespoons minced fresh parsley or 2 teaspoons dry
3/4 cup oatbran or quick cooking oats
1/4 cup unsalted tomato sauce
3 egg whites
1 1/2 teaspoons dried Italian seasoning
1/4 teaspoon ground black pepper
1/2 teaspoon salt

TOPPING:

3/4 cup unsalted tomato sauce
1 teaspoon sugar
1/2 teaspoon dried Italian seasoning

Combine loaf ingredients and mix well. Bake uncovered at 350 for 35 minutes after pressing into a 9x5 loaf pan coated with non stick cooking spray.

Combine topping ingredients and pour over loaf. Bake an additional 30 minutes. Remove from pan and let sit 5-10 minutes before slicing and serving.
