1 pound Green Peas, frozen
3/4 cup Cucumber, chopped
2 cloves fresh Garlic
1/4 cup fresh Basil Leaves (optional)
1 cup Red Bell Pepper
1/2 cup chopped Onion
2/3 cup Lite Sour Cream
1/4 cup Reduced-Fat Mayonnaise
2 tbsp. Lemon Juice
1/2 tsp. Salt
1/4 tsp. Pepper
Place peas in colander and run cool water over them to thaw. SEt aside to drain well. Cut the cucumber in half and, using a spoon, scrape out the seeds. Chop the cucumber and place it in a 2 quart or larger bowl. Peel and finely mince the garlic, adding it to the bowl. If using basil, chop the leaves and add them to the bowl. Seed and chop the pepper, adding it to the bowl as you chop. Peel and chop the onion, adding it to the bowl as you chop.
Add the sour cream, mayonnaise, lemon, salt and pepper to the bowl. Stir well to mix with the vegetables. Add the green peas and toss to coat and mix well. Serve at once or cover and chill up to 24 hours.
Kelley's note: I just tried this for the first time a week or two ago. And, actually, I HATE green peas (just ask my mom) but this was good and it's very colorful and pretty.
