6 slices - Reduced Calorie Bread, cubed
1 1/2 cartons - Egg Beaters/Egg Substitute (or whatever is the equivalent of 6 eggs...depends on brand and packaging)
6 strips - Bacon, raw and cut into pieces
1 cup - shredded Cheddar cheese
Spray pan with cooking spray. Place bread cubes in bottom. Pour egg substitute over bread cubes. Place bacon pieces on top of that. Cover and refrigerate overnight. Bake at 375 degrees for 30 minutes. Remove from oven, add cheese and bake for 30 more minutes.
Kelley's note: This casserole is really good. My husband particularly likes it. I like to make it ahead, keep it in the fridge, then quickly heat up a piece for a quick breakfast during the week.
